This Probiotic Kimchi Potato salad not only tastes fantastic but is also great for gut health due to its Prebiotic (from potatoes) and Probiotic (from Kimchi) contents. Prebiotics, other wise known as Resistance Starch, are carbohydrates that don’t digest in the small intestine, but do further down in the large intestine, providing much needed food for your biome. By eating Probiotics (beneficial bacteria naturally occurring in kimchi and sauerkraut) with prebiotics, you are creating a food for the good guys to move in and take over. Cooking and then cooling a potato increasing it’s resistant starch content by 55%. So if you are having potato salad of any type, be sure to add some sauerkraut or kimchi to your plate, and you will get the same benefit.
